  • 1000g Potatoes
  • 1⅓ cup (160g) Cheddar cheese, shredded
  • 2 teaspoons Salt
  • ½ teaspoon Pepper
  • 4 Garlic cloves, crushed
  • 1 cup (120g) Cornstarch
  • Oregano, Parsley, Coriander, or any fresh/dried herbs of your choice (optional)

Instructions

  1. Peel and cut the potatoes into small chunks.
  2. Fill a large pot with water and add 1 teaspoon of salt. Add the potatoes and bring to a boil. Cook until they are fork-tender, which takes about 20 minutes.
  3. Drain the cooked potatoes and transfer them to a large bowl. Add salt, pepper, oregano, crushed garlic, and shredded cheese. Mash the potatoes into a smooth puree. Then add the cornstarch and mix/mash.
  4. Transfer the potato mixture into a piping bag fitted with a round tip and pipe it into long strips (on a cutting board or parchment paper). If you don’t have a piping bag, you can also divide the mixture into small balls and roll them into strips.
  5. In a wide pan, heat oil to 350°F (180°C).
  6. Fry the mashed potato strips until they are golden brown. Transfer them to paper towels to drain excess oil.

Notes

  • You can get creative with your choice of herbs. Oregano, parsley, coriander, or other herbs you enjoy can add extra flavor to your potato fries.
  • For a shortcut, you can use pre-shredded cheese, but freshly grated cheese typically melts better and has a more vibrant flavor.
  • Make sure the oil is at the correct temperature (350°F or 180°C) before frying to achieve a crispy and golden-brown texture.
  • To minimize oil absorption, you can place the fried potato fries on a paper towel-lined plate to drain any excess oil.
