- 1 cup raw pecans (140 g)
- 1/2 teaspoon sea salt
- 1/2 teaspoon pure vanilla extract
Instructions
- Blend the Dough:
Place the dates, pecans, sea salt, and vanilla extract in a food processor. Blend until a thick, sticky dough forms. You should be able to press it together between your fingers.
Tip: If the dough isn’t sticking together, add 1 teaspoon of warm water and process again. Repeat as needed until the dough is rollable. - Roll into Balls:
Using your hands, roll the dough into 12 bite-sized balls. Place them on a plate or tray.
Notes
- Dates: Ensure you use soft, moist dates for the best texture. If your dates are too dry, soak them in hot water for 15 minutes, then drain before using.
- Storage: Store the pecan pie balls in an airtight container in the refrigerator for up to 2 weeks. They can also be frozen for up to 3 months for longer storage.
