Description

These No-Bake Pecan Pie Balls are a simple, healthy, and delicious snack that tastes just like pecan pie! Made with soft dates and raw pecans, they’re naturally sweetened and require no baking. Perfect for quick bites, holiday treats, or a healthy dessert!


Ingredients

  • 1 cup packed, soft pitted dates (240 g)
  • 1 cup raw pecans (140 g)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Blend the Dough:
    Place the dates, pecans, sea salt, and vanilla extract in a food processor. Blend until a thick, sticky dough forms. You should be able to press it together between your fingers. 
    Tip: If the dough isn’t sticking together, add 1 teaspoon of warm water and process again. Repeat as needed until the dough is rollable.
  2. Roll into Balls:
    Using your hands, roll the dough into 12 bite-sized balls. Place them on a plate or tray.

Notes

  • Dates: Ensure you use soft, moist dates for the best texture. If your dates are too dry, soak them in hot water for 15 minutes, then drain before using.
  • Storage: Store the pecan pie balls in an airtight container in the refrigerator for up to 2 weeks. They can also be frozen for up to 3 months for longer storage.
