Ingredients

  • 1 package of yakisoba noodles (68 ounces, dry)
  • 1 cup brown sugar
  • ¾ cup soy sauce
  • ⅓ cup rice vinegar
  • 2 cloves of garlic (grated)
  • 1 piece of fresh ginger (peeled and grated)
  • 2 tablespoons canned pineapple juice
  • 1 tablespoon cornstarch
  • ½ cup shredded purple cabbage
  • ½ cup shredded green cabbage
  • 1 stalk of bok choy (sliced into ribbons)
  • ¼ bell pepper (thinly sliced)

Instructions

  1. Cook the yakisoba noodles according to the package directions, then drain and let them cool.

  2. In a medium-sized saucepan, combine brown sugar, soy sauce, rice vinegar, grated garlic, and ginger. Stir until the brown sugar is completely dissolved, then bring the sauce to a simmer.

  3. Create a slurry by whisking together the canned pineapple juice and cornstarch.

  4. Add the pineapple juice and cornstarch slurry to the simmering sauce. Bring it back to a boil and let it reduce for 10 minutes.

  5. While the sauce is reducing, heat a few tablespoons of oil in a wide pan. Sauté the vegetables until they become tender and slightly caramelized. Then, set them aside.

  6. Strain the sauce through a fine mesh strainer to remove the garlic and ginger. Discard the garlic and ginger.

  7. Add the cooled noodles to the sautéed vegetables, mixing them together.

  8. Pour ¾ of the sauce over the noodles and vegetables. Toss to combine, and taste to adjust the flavor, adding more sauce if needed.

  9. Garnish the dish with sliced scallions and crushed peanuts.


Notes

  • You can serve these yakisoba noodles either hot or warm, straight from the pan. Cold leftovers can be enjoyed right out of the refrigerator.
  • To reheat, place a portion of noodles in a microwave-safe bowl, add a splash of water, and microwave in 30-second intervals, stirring between, until heated through.
  • Before using bok choy, make sure to wash it thoroughly, as it may have sand or soil between the stalks.
  • A “slurry” is a mixture of cornstarch and liquid that dissolves the cornstarch and is used to thicken sauces. The sauce thickens when it boils after adding the slurry.
