Ingredients

Scale

For the Cake:

  • 4 eggs
  • 180 g sugar (approximately ¾ cup + 2 tbsp)
  • 120 ml extra-virgin olive oil (approximately ½ cup)
  • 50 ml fresh orange juice (approximately ¼ cup)
  • 2 tablespoons Grand Marnier liqueur
  • Zest of one orange
  • 1 teaspoon vanilla extract (optional)
  • 300 g all-purpose flour (approximately 2½ cups)
  • 1 tablespoon baking powder

For the Amaretto Orange Glaze:

  • 130 g icing sugar (approximately 1 cup)
  • 1 tablespoon Amaretto liqueur
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest (optional)

Instructions

  1. Start by preheating your oven to 340°F/170°C and ensure the oven rack is placed in the middle position. Then, generously grease and flour a 9-inch springform bundt pan.

  2. In a spacious bowl, use a hand mixer to whisk together the eggs and sugar until the mixture turns pale and fluffy, which usually takes about 2 minutes.

  3. While continuing to whisk, gradually introduce the extra-virgin olive oil, followed by the fresh orange juice, orange zest, Grand Marnier liqueur (if opted for), and the optional vanilla extract.

  4. Sift the all-purpose flour and baking powder into the bowl through a sieve. Gently whisk the ingredients until they are just combined. Be cautious not to overmix, as overworking the batter can lead to a denser cake.

  5. Carefully pour the cake batter into the prepared bundt pan. Place the pan in the preheated oven and bake for approximately 40 minutes, or until a toothpick inserted into the cake’s center comes out clean.

  6. Once the cake is done, remove it from the oven and let it cool completely at room temperature. Afterward, take it out of the cake pan.

  7. For the Glaze: In a small bowl, create the glaze by whisking together icing sugar, Amaretto liqueur, and orange juice until the mixture is smooth. Adjust the consistency by adding more orange juice, 1 teaspoon at a time, as needed.

  8. Pour the glaze over the cake or dust it with icing sugar before serving.

Notes

  • To ensure the best results in your baking endeavors, it’s worth noting that the original recipe’s measurements are based on grams, which provide greater precision compared to cup measurements. While US cup amounts are provided, using a kitchen scale for ingredient measurement is recommended.
  • To keep the Italian Hangover Cake fresh, you can leave it at room temperature for up to 2 hours. For longer storage, especially in warmer climates, consider using a cake cover in a cool, dry spot in your kitchen.
  • When storing leftover cake, slice it into individual portions and place them in a ziplock bag or an airtight container. This allows you to refrigerate the slices for 3-4 days. Enjoy your Italian Hangover Cake!
