Chicken Cobbler

Ingredients:

  • 1/2 cup (1 stick) butter
  • 4 cups rotisserie chicken meat, shredded
  • 1 (15 ounce) bag frozen mixed vegetables (e.g., corn, peas, carrots, and beans)
  • 1 (11.36 ounce) package Cheddar bay biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix®)
  • 2 cups milk
  • 1 (10.5 ounce) can cream of chicken soup
  • 2 cups chicken stock
  • 2 tablespoons fresh chopped parsley (optional)

Instructions

Preheat the Oven:

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Place butter in the bottom of a 9×13 baking dish and place it in the oven to melt.

Layer the Ingredients:

  1. When the butter is melted, add shredded chicken in a single layer over the melted butter.
  2. Top evenly with the frozen mixed vegetables.

Prepare the Biscuit Topping:

  1. In a bowl, stir together the Cheddar bay biscuit mix and the seasoning packet from the mix.
  2. Add the milk and mix until well blended.
  3. Pour the biscuit mixture over the chicken and veggies, spreading it lightly and evenly over the top of the mixture, but do not stir.

Prepare the Chicken Soup Mixture:

  1. In a second bowl, whisk together the cream of chicken soup and chicken stock until smooth.
  2. Pour this mixture over the biscuit topping, but do not stir.

Bake:

Bake in the preheated oven, uncovered, until the cobbler is very golden brown and only slightly jiggly in the center, which should take about 45 minutes.

Garnish and Serve:

  1. If desired, sprinkle fresh chopped parsley over the top.
  2. Allow the cobbler to stand for 10 minutes before serving.
