Chocolate Mixture

  • 20 oz white chocolate, or white chocolate confectionary, chopped in small pieces (white chocolate chips are not recommended)
  • 1 Tbsp refined coconut oil
  • 1/2 tsp sea salt

Instructions

  1. Preheat and Toast Almonds: Preheat the oven to 350°F (175°C). Spread the almonds evenly on a baking sheet and toast them for about 20 minutes. Shake the pan occasionally and monitor closely during the last 5 minutes to ensure they become darkly roasted but not burnt. Once toasted, let them cool on the pan.
  2. Prepare Baking Sheet: Line a fresh baking sheet with a Silpat mat, parchment paper, or non-stick foil to prevent sticking and facilitate easy removal of the bark.
  3. Melt Chocolate Mixture: In a microwave-safe glass bowl, combine the chopped white chocolate, refined coconut oil, and sea salt. Heat on full power for one minute, then continue heating in short intervals, stirring thoroughly after each, until the chocolate is fully melted and smooth. Note: If using white chocolate chips, they will only appear melted once stirred.
  4. Combine and Spread: Quickly stir the toasted almonds into the melted chocolate mixture. Pour and spread the mixture evenly on the prepared baking sheet to approximately 9 1/2 by 14 inches, ensuring an even layer for consistent bark thickness.
  5. Set and Harden: Allow the bark to harden completely at room temperature or refrigerate to speed up the process. The bark should become firm and easy to break apart.
  6. Cut and Serve: Break or slice the hardened bark into desired piece sizes. Enjoy immediately or store for sharing with loved ones.
