Description

These sweet marshmallow potato bites feature roasted sweet potato rounds topped with gooey marshmallows, a drizzle of maple syrup, and crunchy pecans. Perfect for holiday gatherings or a fun, sweet twist on a classic side dish!

  • 4 medium sweet potatoes, peeled and sliced into 1-inch rounds (about 2 lbs)
  • 1/4 cup salted butter, melted
  • 1/2 teaspoon salt
  • 2 tablespoons maple syrup
  • About 12 regular-sized marshmallows, halved
  • About 24 pecan halves

Instructions

  1. Preheat the Oven:
    Preheat your oven to 425°F (218°C). Grease a sheet pan with butter or nonstick spray.
  2. Prepare the Sweet Potatoes:
    Arrange the sweet potato rounds on the prepared pan. Drizzle melted butter over the rounds and sprinkle with salt. Toss until the sweet potatoes are evenly coated.
  3. Roast the Sweet Potatoes:
    Roast the sweet potatoes in the preheated oven for 20 minutes. Flip the rounds over (the bottoms should be browned) and continue roasting for another 15-20 minutes, or until the sweet potatoes are fork-tender.
  4. Add Maple Syrup and Marshmallows:
    Remove the sweet potatoes from the oven and set the oven to broil. Drizzle maple syrup over the roasted sweet potatoes and toss gently to coat. Place a marshmallow half on top of each sweet potato round.
  5. Broil:
    Place the pan under the broiler for 1-3 minutes, watching closely, until the marshmallows are lightly toasted.
  6. Top with Pecans and Serve:
    As soon as the sweet potatoes come out of the oven, press a pecan half into the top of each marshmallow. Serve immediately and enjoy!
