Instructions

  1. Cook Pasta: Boil a large pot of salted water. Add the pasta and cook until al dente, about 8-10 minutes depending on the pasta used. Reserve a splash of pasta water before draining.
  2. Prepare Sauce Base: While pasta cooks, melt butter in a skillet over medium heat. Stir in flour and minced garlic, cooking for about 30 seconds until fragrant to create a roux.
  3. Add Liquids and Seasonings: Whisk in the white wine (or chicken broth), Dijon mustard, lemon juice, and Italian seasoning. Continue cooking over medium heat until the mixture reduces by half to concentrate flavor.
  4. Add Tomatoes and Cream: Stir in sun-dried tomatoes and heavy cream. Allow the sauce to bubble gently for about 5 minutes to thicken.
  5. Incorporate Cheese and Spinach: Mix in the Parmesan cheese until melted and combined. Then add the fresh baby spinach, letting it wilt in the sauce, about 1-2 minutes.
  6. Combine Pasta and Sauce: Toss the drained pasta into the sauce. If the sauce is too thick, add a splash of reserved pasta water to loosen it. Season with salt and pepper to taste.
  7. Serve: Serve immediately while hot for the best flavor and texture.

Notes

  • If your sun-dried tomatoes are packed in oil, be sure to drain them well before using to prevent an overly oily sauce.
