Description

  • 1 1/2 pounds lean ground beef
  • 1 yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 3 small cloves garlic, minced
  • 1 teaspoon Italian seasoning or cajun seasoning
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 14 ounces canned diced tomatoes
  • 1 cup long grain white rice
  • 1 1/2 cups beef broth
  • 1 1/2 cups shredded cheese (cheddar, mozzarella, or both)

For Garnish:

  • Parsley

Instructions

  1. Preheat the oven: Preheat the oven to 350ยฐF/180ยฐC.
  2. Cook the beef: In a skillet, heat olive oil over medium-high heat. Add ground beef and cook until no longer pink. Drain excess fat.
  3. Add vegetables and seasonings: Add onion, bell peppers, garlic, Italian seasoning, Worcestershire sauce, salt, and pepper. Cook briefly.
  4. Combine with tomatoes and rice: Stir in diced tomatoes, rice, and beef broth. Bring to a boil.
  5. Bake: Cover and bake for 20-25 minutes until rice is cooked.
  6. Add cheese: Sprinkle shredded cheese over the casserole and broil until melted and bubbly.
  7. Garnish and serve: Garnish with parsley before serving.
