Ingredients

Units Scale

Chicken and Vegetables

  • 2 lbs. boneless skinless chicken breast
  • 8 garlic cloves, sliced
  • 1 onion, sliced

Liquids and Seasonings

  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1 tbsp olive oil
  • 1 tsp pepper
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp cumin

Instructions

  1. Prepare the ingredients: Slice the garlic cloves and onion. Measure out the chicken broth, lemon juice, and seasonings so everything is ready to go.
  2. Layer the slow cooker: Place the boneless skinless chicken breasts at the bottom of the slow cooker. Add the sliced garlic and onion evenly over the chicken.
  3. Add liquids and seasonings: Pour the chicken broth and lemon juice over the chicken and vegetables. Drizzle with olive oil and sprinkle the pepper, oregano, salt, and cumin evenly on top.
  4. Cook low and slow: Cover the slow cooker with its lid and cook on low heat for 4 hours until the chicken is tender and fully cooked through.
  5. Serve: Once cooked, carefully remove the chicken breasts with a slotted spoon. Spoon some of the flavorful sauce and cooked onions over the chicken and serve warm with your favorite side dishes.

Notes

  • You can substitute chicken thighs if preferred; adjust cooking time accordingly.
  • Serve with rice, roasted vegetables, or a fresh salad for a complete meal.
  • Leftovers can be stored in the refrigerator up to 3 days and reheated gently.
  • For a thicker sauce, remove the chicken after cooking and reduce the liquid on the stovetop.
