  • 3 tablespoons Monkfruit Granulated Sweetener
  • 1/4 cup Soy Sauce
  • 1/2 teaspoon Chilli Powder
  • 1/2 teaspoon Smoked Paprika
  • 2 tablespoons Oil (divided)

For Garnish

  • 2 tablespoons White Sesame Seeds
  • 2 Green Shallots, sliced thinly

Instructions

  1. Brown Chicken: Heat 1 tablespoon of oil in a large non-stick pan or skillet over medium-high heat. Add the chicken thighs and cook for about 4 to 5 minutes until browned on both sides. Transfer the browned chicken to the slow cooker.
  2. Lightly Cook Onions, Garlic, and Ginger: Add the remaining 1 tablespoon of oil to the same pan. Add the thinly sliced onions and cook until they just start to soften, about 3-4 minutes. Then stir in the minced garlic and grated ginger and cook for 1 minute until fragrant.
  3. Add Remaining Ingredients: Stir in the lemon juice, monkfruit sweetener, and soy sauce to the onion mixture. Add the chilli powder and smoked paprika, bring the mixture to a boil, then remove from heat.
  4. Slow Cook: Pour the onion and sauce mixture over the chicken in the slow cooker. Cover with the lid and cook on low heat for 6 hours until the chicken is tender and infused with flavors.
  5. Garnish and Serve: Once cooked, sprinkle with white sesame seeds and thinly sliced green shallots before serving for added crunch and freshness.
