Ingredients
Scale
Chicken
- 2 skinless, boneless chicken breasts (can substitute all breasts or thighs)
- 4 chicken thighs
Sauce
- ⅓ cup Dijon mustard
- ⅓ cup stone ground mustard
- ½ cup honey
- 1 tablespoon garlic, minced
- ½ teaspoon salt
- ½ teaspoon ground pepper
Thickening (optional)
- 2 tablespoons potato starch
- 4 tablespoons cold water (for thickening sauce)
Instructions
- Prepare the slow cooker: Lightly coat your slow cooker insert with a non-stick cooking spray or your oil of choice to ensure easy cleanup.
- Mix the sauce: In the greased slow cooker, combine ⅓ cup Dijon mustard, ⅓ cup stone ground mustard, ½ cup honey, 1 tablespoon minced garlic, ½ teaspoon salt, and ½ teaspoon ground pepper. Stir until thoroughly mixed.
- Add the chicken: Place 2 skinless, boneless chicken breasts and 4 chicken thighs into the slow cooker. Toss gently to coat the chicken pieces evenly with the mustard mixture.
- Optional marinating: For enhanced flavor, you can place the chicken and sauce mixture into a zip-top bag and marinate in the refrigerator for a few hours or overnight before cooking.
- Cook the chicken: Set the slow cooker to low heat and cook for 4-6 hours or set to high heat and cook for 2.5-3 hours, until the chicken is thoroughly cooked and tender.
- Thicken the sauce (optional): Just before serving, blend 2 tablespoons of potato starch with 4 tablespoons of cold water until smooth. Stir this mixture into the warm slow cooker sauce; it will thicken quickly.
Notes
- The sauce is mild by default. For a stronger mustard flavor, increase the combined mustard amount from ½ cup to ¾ cup.
- You can use all chicken breasts or all thighs based on preference.
- Coating the slow cooker helps with easy cleanup and prevents sticking.
- Thickening the sauce with potato starch is optional but recommended for a richer texture.
- This recipe is great for meal prepping as the marinade step can be done in advance.
