For the Crack Chicken
- 1/2 cup low sodium chicken broth

- 4 boneless, skinless chicken breasts
- 8 ounces block of cream cheese, at room temperature and cut into 4 pieces
- 2 cups shredded cheddar cheese, divided
- 6 slices bacon, cooked to a crisp and chopped
For Garnish
- Chopped green onions
- Chopped fresh parsley
Optional Homemade Ranch Seasoning Mix
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried dill weed
- 1/2 teaspoon dried chives
- Salt and pepper, to taste
Instructions
- Make the ranch mix: Pour the low sodium chicken broth into the slow cooker and stir in the ranch seasoning mix until well combined.
- Combine and cook: Add the boneless, skinless chicken breasts to the slow cooker, stirring gently to coat the chicken evenly with the seasoned broth. Cover with the lid and cook on LOW for 5 hours or on HIGH for 2 to 3 hours until the chicken is fully cooked and tender.
- Shred the chicken: Remove the lid and use two forks or shredding claws to shred the chicken directly inside the slow cooker until it is fully pulled apart.
- Add the cheeses: Stir in the cream cheese pieces and 1½ cups of shredded cheddar cheese. Mix continuously until all the cheese has melted and combined thoroughly with the shredded chicken.
- Finish melting cheese: Sprinkle the remaining ½ cup of shredded cheddar cheese over the top of the mixture, cover again with the lid, and allow the cheese to melt for a few minutes.
- Serve and garnish: Remove the lid. Sprinkle the chopped crispy bacon over the cheesy chicken mixture. Garnish with chopped green onions and fresh parsley. Serve hot as a filling for sandwiches, wraps, burgers, or lettuce cups.
