  • 1/4 teaspoon of crushed red peppers (optional)
  • 2 tablespoons of parsley, roughly minced
  • 1 teaspoon of mint, minced (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. Begin by washing the carrots. Using a peeler, carefully slice them into thin, flexible, and long strips. Place these in a large bowl and set aside.

  2. In a jar or small bowl, combine the apple cider vinegar, and if you prefer, olive oil (optional), balsamic vinegar, agave or maple syrup, salt, and pepper. Mix well and set the dressing aside.

  3. Now, add the parsley and the prepared dressing to the bowl with the carrots. Toss everything together to ensure the carrots are evenly coated. You can serve the salad either at room temperature or chilled.

  • To ensure the carrot slices are tender and easy to eat, make sure they are thinly sliced.
  • Using a mandoline or a food processor slicing disk can expedite the slicing process and ensure uniform carrot ribbons.
  • Feel free to adjust the texture of the salad by changing the thickness and cut of the carrots. You can create slices, spirals, or even a shredded carrot salad.
