Ingredients
- 2 sheets puff pastry
- 1/4 cup water (60 mL)
- 6 eggs
- Egg wash
- 1 tablespoon olive oil
- 1 orange bell pepper, diced
- 1 red bell pepper, diced
- 1 teaspoon salt
- 1/2 teaspoon pepper, divided
- 8 strips bacon, cooked and finely diced
- 1 cup shredded cheddar cheese (100 g)
- 1/4 cup fresh chives (10 g), finely chopped

Preheat your oven to 350°F (180°C).

Take each puff pastry sheet and make three vertical cuts from the top to the bottom. These cuts should be about 2.5 inches (6 cm) apart. Repeat this process horizontally to create a total of 18 squares.

Lightly brush one square of puff pastry with water, then place another square on top of it, trimming any uneven edges. Repeat this step with the remaining squares.

Arrange the square pairs on a baking sheet, leaving approximately 1 inch of space between them. Brush the top of each square with the egg wash.

Bake for 20 minutes or until the pastry turns a pale golden color. Remove from the oven and allow them to cool.

In a large pan, heat olive oil over medium heat. Add the diced peppers, salt, and half of the pepper. Sauté the peppers for about 8 minutes or until they have softened.

Cut a rectangle in the center of each square of puff pastry and gently press it down. Fill the interior of the puff with a thin layer of bacon, cheddar cheese, and the sautéed peppers. Use a small spoon or utensil to press down the layers. Carefully crack an egg on top.

Bake for an additional 20 minutes or until the egg white is no longer translucent or runny.
