Description

  • 2 tablespoons (10ml) soy sauce
  • 3 tablespoons (15ml) oyster sauce
  • ½ cup (120ml) chicken stock
  • 1 cup (240ml) water
  • 2 tablespoons (20g) cornstarch

Meat

  • 1 pound (450g) boneless sirloin tips
  • Salt to taste
  • 1 tablespoon (15ml) cooking oil

Vegetables and Seasonings

  • 2 large bell peppers (red and green)
  • 3 cloves garlic, minced
  • 12 teaspoons (2-4g) paprika
  • 1 teaspoon (1g) minced ginger
  • 12 teaspoons (3-5g) Creole Cajun seasoning, salt-free (optional)
  • 1 medium onion, chopped
  • 12 green onions, chopped
  • 1 teaspoon (5ml) hot sauce (adjust to taste)

Instructions

  1. Prepare the sauce: In a mixing bowl, combine soy sauce, oyster sauce, chicken stock, water, and cornstarch. Mix well and set aside to thicken slightly.
  2. Season the beef: In another bowl, season the boneless sirloin tips with a little salt and some soy or oyster sauce to infuse flavor.
  3. Cook the beef: Heat a wok or saucepan with 1 tablespoon of cooking oil over medium-high heat. Add the beef and let it sear without stirring for about 30 seconds to develop a crust. Stir and cook for 2 minutes or until the beef reaches your desired doneness. Remove the beef from the pan and keep warm.
  4. Stir-fry vegetables: In the same wok or pan, add the chopped bell peppers and onion. Stir-fry for 2 minutes until they begin to soften. Add minced garlic, paprika, minced ginger, and Creole seasoning if using. Continue stirring for another 2-3 minutes to release the aromas and flavors.
  5. Thicken the sauce and combine: Pour the prepared sauce mixture into the wok with the vegetables. Cook and stir for about 2 minutes until the sauce thickens and coats the vegetables evenly.
  6. Add beef back to the wok: Return the cooked beef to the pan and toss everything together to combine thoroughly and heat through.
  7. Finish and serve: Remove from heat and serve hot over rice. Garnish with chopped green onions and add hot sauce to taste for an extra kick.
