- 1 cup buttermilk
- 26-count bag sausage patties (e.g., Jimmy Dean’s Heat ‘N Serve original sausage patties)
- Butter, powdered sugar, and maple syrup (optional)
- 1 1/2 – 2 cups vegetable oil (for frying)
Instructions
- Cook the Sausage: Heat a frying pan over medium-high heat and cook the sausage patties according to the package directions. Once cooked, remove them from the pan and place them on a paper towel-lined plate to absorb excess grease.
- Prepare the Batter: In a medium bowl, whisk together the flour, sugar, baking soda, salt, and baking powder. In a separate small bowl, whisk the egg and buttermilk until well combined. Pour the wet ingredients into the dry ingredients and gently stir until just combined. The batter should remain slightly lumpy.
- Heat the Oil: In a large saucepan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).
- Coat the Sausage: Dip each cooked sausage patty into the pancake batter, ensuring it is fully coated.
- Fry the Bites: Carefully place a few battered sausages at a time into the hot oil. Fry them until golden brown on all sides, about 2-3 minutes. Use a slotted spoon to remove the pancake sausage bites from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve: Serve the pancake sausage bites hot, topped with powdered sugar and drizzled with maple syrup, if desired.
Notes
- If you prefer, you can make mini sausage patties for smaller bites.
- To avoid soggy bites, drain on paper towels immediately after frying.
