Description

  • 1 1/4 cup pecans

  • 2 cups powdered sugar

  • 3/4 cup orange juice concentrate, mostly thawed (about 6 oz)
  • 1/2 tsp vanilla extract
  • 1 stick unsalted butter, softened

Instructions

  1. Crush Ingredients: In a food processor, pulse the vanilla wafer cookies until they become very fine crumbs. Transfer these crumbs to a mixing bowl. Then pulse the pecans until finely ground and add them to the same bowl. Next, pulse the coconut flakes until coarsely chopped and transfer them to a separate shallow dish for coating later.
  2. Mix Dough: To the bowl containing the wafer and pecan crumbs, add the powdered sugar, mostly thawed orange juice concentrate, vanilla extract, and softened butter. Using a hand mixer, blend all ingredients thoroughly until a uniform dough forms.
  3. Shape Snowballs: Use a small cookie scoop to portion out the dough into individual servings. With your hands, roll each portion into a smooth ball shape.
  4. Coat and Chill: Roll each dough ball in the coarsely chopped coconut flakes until fully coated. Arrange the coated balls on a cookie sheet, then chill them in the refrigerator until they firm up.
  5. Store: Once set, transfer the snowballs to an airtight container and store any leftovers in the refrigerator to maintain freshness.

Notes

  • If only 11oz boxes of vanilla wafers are available, compensate for the weight difference by adding 2-3 sheets of graham crackers crushed or by using an extra 1/3 cup of powdered sugar, noting this may increase sweetness.
  • Alternatively, purchase two boxes of wafers and use the extra for another recipe, such as banana pudding.
