  • 3/4 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 Tablespoons chopped fresh Italian flat leaf parsley

  • 4โ€“6 ounces mozzarella, cut into 24 1/2โ€ณ cubes

Instructions

  1. Prepare the Oven: Preheat the oven to 400ยฐF. Line a baking sheet with foil and spray with nonstick spray to prevent sticking.
  2. Mix Ingredients: In a large bowl, gently mix the beef, egg, breadcrumbs, parmesan, garlic, onion, salt, pepper, and parsley. Use a wooden spoon or your hands for best results, stopping just until combined to avoid overmixing. If the mixture feels dry, add 1 to 2 tablespoons of water.
  3. Shape the Meatballs: Using a medium cookie scoop or spoon, portion the meat mixture onto the prepared baking sheet. Place a mozzarella cube in the center of each, then wrap the meat around it to form balls about 1 1/2 inches in diameter.
  4. Bake the Meatballs: Bake the meatballs uncovered for 17 to 20 minutes, turning halfway through cooking. They are done when no longer pink in the center. Serve with your favorite pasta dish.
