For the Banana Loaf:

  • 75 g Butter, melted (preferably unsalted)
  • 100 g Caster sugar
  • 2 Medium free-range eggs
  • 225 g Self-raising flour
  • 3 Large ripe bananas, peeled and mashed

Instructions

  1. Preheat the oven: Set your oven to 180°C (350°F) to ensure it reaches the correct temperature for baking your banana loaf.
  2. Prepare the tin: Grease a loaf tin (about 23x13cm / 900g / 2lb) with soft butter or line it with baking paper to prevent sticking.
  3. Mix the ingredients: In a mixing bowl, break the eggs and add the melted butter, caster sugar, self-raising flour, and mashed ripe bananas. Mix thoroughly either by hand or with an electric mixer until smooth and well combined.
  4. Transfer to tin: Spoon the batter into the prepared loaf tin, smoothing the top evenly with the back of a spoon for an even bake.
  5. Bake the cake: Place the tin in the preheated oven and bake for 40 to 50 minutes at 180°C (350°F), or until the top is golden brown and a skewer or knife inserted into the center comes out clean.
