Description

This Million Dollar Chicken Casserole is a creamy, cheesy, and flavorful dish that’s sure to become a family favorite. It’s made with tender chicken, a rich and creamy sauce, and topped with a buttery cracker topping.

Ingredients

Units Scale
  • 4 1/2 cups chopped cooked chicken
  • 4 ounces cream cheese, softened
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1 (10.5-ounce) can unsalted cream of chicken soup
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried onion powder
  • 1 sleeve Ritz crackers, crushed
  • 5 tablespoons butter, melted

Instructions

  1. Preheat and Prep: Preheat oven to 350°F. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.
  2. Combine Ingredients: In a large bowl, combine chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix well.
  3. Assemble Casserole: Spread the chicken mixture into the prepared pan. In a small bowl, combine crushed crackers and butter. Sprinkle the cracker mixture over the chicken mixture.
  4. Bake: Bake uncovered for 30 to 40 minutes, or until golden brown and bubbly.

Notes

  • Chicken: Use a rotisserie chicken for quick prep of the cooked chicken.
  • Cream Cheese: You want the cream cheese to be very soft so it gets fully incorporated into the casserole. Microwave the cream cheese for 15 to 20 seconds if you are short on time.
  • Make Ahead: Can be prepared through step 3 and refrigerated or frozen for later. To bake after freezing, thaw completely and bake as directed.
  • Gluten-Free: For a gluten-free dish, use gluten-free cream of chicken soup and crushed pork rinds instead of Ritz crackers.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
