Ingredients
Scale
For Steak Bites:
- 1.5 lb steak, cut into bite sized pieces approx. 1 1/2 in. cubes
- 2–3 tablespoons olive oil
- 1/2 tablespoon fresh thyme, finely chopped (or 3/4 teaspoon dried thyme)
- 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
- 1 teaspoon dried oregano
- 2 garlic cloves, minced
- 2 teaspoons lemon juice
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly cracked pepper
- 1/3 cup feta cheese
- 1 cup grape tomatoes, halved
For the Yogurt Sauce:
- 1/2 cup plain Greek yogurt
- 1–2 garlic cloves, minced
- 1 teaspoon lemon juice
- 2 teaspoons olive oil
- 1 tablespoon chopped dill (or 1–2 teaspoons dried dill)
- Salt, to taste
Instructions
- Marinate the Steak: In a medium bowl or large Ziploc bag, whisk together olive oil, garlic, oregano, thyme, rosemary, lemon juice, sea salt, and freshly cracked pepper until well combined. Add the steak bites to the mixture, tossing or shaking to coat evenly. Marinate for at least 30 minutes, though several hours or overnight will enhance the flavor further.
- Cook the Steak Bites: Heat a cast iron or nonstick skillet over medium-high heat. Add the marinated steak pieces along with any remaining marinade and olive oil. Sear the steak bites for 2-3 minutes on each side, flipping only once to ensure a nice crust and even cooking. For more well-done steak bites, cook an additional 2-4 minutes. Remove skillet from heat.
- Add Tomatoes and Feta: After removing the skillet from heat, toss in the halved grape tomatoes to warm slightly in the residual heat. Sprinkle with crumbled feta cheese just before serving to add a creamy, salty contrast.
- Prepare the Yogurt Sauce: In a small bowl, combine plain Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill, and salt to taste. Stir well and chill until ready to serve.
- Serve: Plate the steak bites topped with tomatoes and feta alongside or drizzled with the yogurt sauce. The sauce can also be served as a dip. This dish pairs well over rice or with your favorite sides for a complete meal.
Notes
- Marinate the steak for as long as possible to deepen the flavor; even 10 minutes will yield tasty results.
- Avoid overcooking the steak bites as they cook quickly; remove from heat just before they reach your desired doneness since they will continue to cook slightly off the stove.
- These steak bites are versatile and can be served over rice, with pita bread, or alongside a fresh salad for a complete Mediterranean-inspired meal.
