For The Meatloaf

  • 1 1/4 lb lean ground beef
  • 1 cup bread crumbs
  • 2 large eggs
  • 1 small white onion, diced
  • 2 tsp garlic powder
  • 2 tsp dried parsley
  • 1 tsp Italian seasoning
  • 1/2 cup honey barbecue sauce
  • salt & pepper, to taste
  • 1 cup creamy mac and cheese
  • 1 cup shredded mozzarella

For The Sauce

  • 1/3 cup ketchup
  • 2 tbsp brown sugar
  • 2 tbsp yellow mustard
  • 1 tbsp honey

Instructions

  1. To Make The Meatloaf – In a large mixing bowl, combine ground beef, breadcrumbs, eggs, onion, garlic powder, parsley, Italian seasoning, salt, pepper, and barbecue sauce. Shape half of the mixture into a loaf in a prepared pan. Fill with mac and cheese mixture. Cover with remaining meat mixture. Bake at 350°F for 40 minutes.
  2. To Make The Sauce – Mix ketchup, brown sugar, mustard, and honey. Spread over partially cooked meatloaf. Bake at 400°F for 15 minutes more until cooked through.
  3. Let the meatloaf rest before slicing and serving with a side salad.
