For The Meatloaf

  • 1 1/4 lb lean ground beef
  • 1 cup bread crumbs
  • 2 large eggs
  • 1 small white onion, diced
  • 2 tsp garlic powder
  • 2 tsp dried parsley
  • 1 tsp Italian seasoning
  • 1/2 cup honey barbecue sauce
  • salt & pepper, to taste
  • 1 cup creamy mac and cheese
  • 1 cup shredded mozzarella

For The Sauce

  • 1/3 cup ketchup
  • 2 tbsp brown sugar
  • 2 tbsp yellow mustard
  • 1 tbsp honey

Instructions

  1. To Make The Meatloaf โ€“ In a large mixing bowl, combine ground beef, breadcrumbs, eggs, onion, garlic powder, parsley, Italian seasoning, salt, pepper, and barbecue sauce. Shape half of the mixture into a loaf in a prepared pan. Fill with mac and cheese mixture. Cover with remaining meat mixture. Bake at 350ยฐF for 40 minutes.
  2. To Make The Sauce โ€“ Mix ketchup, brown sugar, mustard, and honey. Spread over partially cooked meatloaf. Bake at 400ยฐF for 15 minutes more until cooked through.
  3. Let the meatloaf rest before slicing and serving with a side salad.
