For The Meatloaf
- 1 1/4 lb lean ground beef
- 1 cup bread crumbs
- 2 large eggs
- 1 small white onion, diced
- 2 tsp garlic powder
- 2 tsp dried parsley
- 1 tsp Italian seasoning
- 1/2 cup honey barbecue sauce
- salt & pepper, to taste
- 1 cup creamy mac and cheese
- 1 cup shredded mozzarella
For The Sauce
- 1/3 cup ketchup
- 2 tbsp brown sugar
- 2 tbsp yellow mustard
- 1 tbsp honey
Instructions
- To Make The Meatloaf โ In a large mixing bowl, combine ground beef, breadcrumbs, eggs, onion, garlic powder, parsley, Italian seasoning, salt, pepper, and barbecue sauce. Shape half of the mixture into a loaf in a prepared pan. Fill with mac and cheese mixture. Cover with remaining meat mixture. Bake at 350ยฐF for 40 minutes.
- To Make The Sauce โ Mix ketchup, brown sugar, mustard, and honey. Spread over partially cooked meatloaf. Bake at 400ยฐF for 15 minutes more until cooked through.
- Let the meatloaf rest before slicing and serving with a side salad.
