Description

Lebkuchen Schokoküsse are delightful German treats featuring a light and fluffy meringue infused with traditional Lebkuchen spices, piped onto crispy waffle bases, and coated in rich, melted Lebkuchen chocolate. Finished with crumbled soft Lebkuchen hearts on top, these festive desserts combine delicate textures and warming flavors perfect for the holiday season.

Ingredients

Scale

Base

  • 1 large waffle sheet (20 x 30 cm)

Meringue

  • 3 large egg whites (size M)
  • Pinch of salt
  • 150 g sugar
  • 1 tbsp vanilla sugar
  • 1 tsp cream of tartar (Weinsteinbackpulver)
  • 2 tsp Lebkuchen spice mix

Chocolate Coating

  • 300 g Lebkuchen chocolate or chocolate of choice
  • 1 tbsp coconut fat (Kokosfett)

Decoration

  • 1 soft Lebkuchen heart

Instructions

  1. Prepare the Meringue Base: Gently warm the egg whites together with a pinch of salt, sugar, and vanilla sugar over a hot water bath, stirring constantly. Then, whip this egg-sugar mixture for 6-7 minutes until it becomes a pale, stiff foam. Gradually fold in the cream of tartar and finally add the Lebkuchen spice mix, blending well to flavor the meringue.
  2. Cut Waffle Circles: Using a cookie cutter or a round mold, cut 12 circles approximately 5 cm in diameter from the large waffle sheet. Arrange them on a clean board or tray.
  3. Pipe Meringue onto Bases: Transfer the meringue mixture into a piping bag fitted with an open round tip. Pipe a consistent dollop of meringue onto each waffle base, forming a small dome shape. Place the assembled Schokoküsse in the refrigerator to rest and set for about 1 hour.
  4. Melt Chocolate Coating: Melt the Lebkuchen chocolate together with the coconut fat over a hot water bath or in a microwave at low power, stirring frequently to ensure a smooth, lump-free chocolate coating.
  5. Coat Schokoküsse: Place the chilled Schokoküsse on a wire rack set over a clean baking sheet to catch excess chocolate. Pour the melted chocolate evenly over each Schokokuss, fully covering the meringue and waffle base.
  6. Decorate and Chill: Crumble the soft Lebkuchen heart over the freshly coated Schokoküsse for a festive, crunchy finish. Let them firm up briefly in the refrigerator before serving fresh and enjoy.

Notes

  • This recipe is versatile; instead of Lebkuchen spice, you can add peppermint oil, vanilla paste, or coconut flakes to the meringue for varied flavors.
  • Make sure to whip the egg whites until very stiff for the best fluffy texture.
  • Work carefully when melting chocolate to avoid burning; constant stirring helps maintain smoothness.
  • Storing the Schokoküsse in the refrigerator helps maintain their shape and keeps them fresh longer.
