- 3 pounds boneless beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 teaspoons salt
- 2 teaspoons pepper
- 2 teaspoons Italian seasoning
- 4 tablespoons Worcestershire sauce
- 6 cloves garlic, minced
- 2 large onions, chopped
- 2 (16-ounce) bags baby carrots, cut into slices
- 2 pounds potatoes, cubed
- 5 cups beef broth
- 2 (10-ounce) cans tomato sauce
- 4 tablespoons cornstarch
- 4 tablespoons water
Instructions
- Brown the meat: Add olive oil to the Instant Pot and set it to the sauté function. When the oil starts to sizzle, add the beef and season with salt, pepper, and Italian seasoning. Cook the meat until browned on all sides.
- Make the broth: Add the beef broth to the Instant Pot and use a spoon to scrape the brown bits from the bottom of the pan.
- Add remaining ingredients: Add the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.
- Cook: Close the lid and steam valve on the Instant Pot. Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
- Thicken the sauce: In a small bowl, mix together the cornstarch and cold water. Stir into the stew until thickened.
- Serve: Serve hot with your favorite sides, such as mashed potatoes, rice, or bread.
Notes
- ou can use a different cut of beef, such as chuck roast or brisket, but adjust the cooking time accordingly.
- If you don’t have an Instant Pot, you can make this stew in a slow cooker. Cook on low for 6-8 hours or on high for 4-5 hours.
- For a richer flavor, add a tablespoon of Worcestershire sauce or a teaspoon of soy sauce.
- You can also add other vegetables, such as mushrooms, celery, or bell peppers.
