Description

These Honey Bacon Roasted Potatoes are crispy on the outside, tender on the inside, and infused with the sweet and savory flavors of honey and bacon. Perfect for a comforting side dish, they are sure to be a hit at your dinner table.

  • 4 large potatoes, peeled and diced
  • 3 garlic cloves, minced
  • 2 thick bacon strips, cut into pieces
  • 2 tablespoons honey
  • 1/2 teaspoon salt, or to taste
  • 1 teaspoon cracked pepper
  • Chopped parsley, for garnish

Instructions

  1. Boil the Potatoes:
    Peel and chop the potatoes, then place them in a large pot. Cover with cold water and add 1 tablespoon of salt. Bring the water to a boil and cook the potatoes until tender, about 8 minutes from the boiling start. While the potatoes are boiling, preheat your oven to 400ºF (200°C).
  2. Drain and Steam Dry:
    Drain the potatoes and let them steam dry for 10 minutes. Meanwhile, lightly oil a rimmed baking sheet and place it in the preheated oven to heat up.
  3. Roast the Potatoes:
    Spread the cooked potatoes on the warm baking sheet, drizzle with a tablespoon of olive oil, and season with salt and cracked pepper (be light on salt as the potatoes were boiled in salted water). Toss to coat well and spread them evenly. Roast the potatoes for 30 minutes, stir quickly, and roast for an additional 10-15 minutes until golden and crispy.
  4. Cook the Bacon:
    While the potatoes are roasting, brown the diced bacon in a skillet over medium heat until crispy. Drain the excess fat and stir in the honey and minced garlic.
  5. Combine and Serve:
    Once the potatoes are done roasting, pour the honey and bacon mixture over them and gently toss to combine. Transfer the potatoes to a serving dish, garnish with chopped parsley, and serve immediately. Enjoy!

  • You can add some smoked paprika or chili flakes to the honey mixture for an extra layer of flavor.
