Description

Haitian Spaghetti is a flavorful and comforting pasta dish featuring al dente spaghetti tossed in a rich tomato-based sauce infused with Haitian epis, bell peppers, onions, and savory hot dogs. Finished with boiled eggs, this vibrant one-pot meal embodies the bold and aromatic flavors of traditional Haitian cuisine.

Ingredients

Scale

Spaghetti

  • ½ lb Spaghetti

Sauce

  • ¼ cup Olive oil
  • 2 tbsp Haitian Epis
  • 1 Onion, chopped
  • 1 Green Bell Pepper, diced
  • 1 Red Bell Pepper, diced
  • 2 Roma Tomatoes, diced
  • 2 tbsp Tomato paste
  • 3 small Maggi cubes
  • 4 Hot Dogs, cut into rounds
  • ⅛ tsp ground Cloves
  • ⅓ cup water (reserved pasta water)
  • Salt to taste

Garnish

  • 2 Hard boiled eggs

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil. Add ½ lb spaghetti and cook until al dente according to package instructions, usually about 8–10 minutes. Reserve a few ladles of the pasta water before draining and set aside the pasta.
  2. Prepare the base sauce: Heat ¼ cup olive oil in a large saucepan over medium heat. Add 2 tbsp Haitian epis and fry until it becomes fragrant and slightly golden, releasing the aromatic flavors of the herb and vegetable blend.
  3. Sauté the vegetables: Add the chopped onion, diced green and red bell peppers, and diced Roma tomatoes to the saucepan. Sauté for about 5 minutes until the vegetables are tender and softened, stirring occasionally.
  4. Build the sauce: Stir in 2 tbsp tomato paste and crumble in 3 small Maggi cubes. Add the 4 cut-up hot dogs and ⅛ tsp ground cloves. Mix well to combine all ingredients thoroughly.
  5. Simmer the sauce: Pour in ⅓ cup of the reserved pasta water to loosen the sauce. Let it simmer gently for 10-15 minutes until a rich sauce forms and the flavors meld together. Season with salt to taste.
  6. Combine pasta and sauce: Add the cooked spaghetti to the sauce and toss well to coat every strand with the flavorful sauce evenly.
  7. Serve: Plate the spaghetti and garnish each serving with half a hard boiled egg. Serve immediately and enjoy the vibrant Haitian flavors.

  • Copyright The Foreign Fork. For personal or educational use only.
  • Meat: Hot dogs can be substituted with any sausage or seafood depending on preference.
  • Tomato Paste adds depth and brings the flavors together in the sauce.
  • Spaghetti noodles are easy to find and make this a convenient recipe.
  • Fresh peppers, onions, and tomatoes add fresh flavor and texture.
  • Maggi cubes enhance flavor; substitute with bouillon cubes or a mix of Worcestershire and soy sauce if unavailable.
  • Haitian Epis is essential for authentic flavor—prepare fresh or store for 7-10 days refrigerated.
  • For a vegetarian version, omit the hot dogs or meat entirely.
  • If sauce is too thick, add additional reserved pasta water to adjust consistency.
  • Most recipes add epis before meat to allow the meat to absorb the epis flavor.
