- 2 tbsp Haitian Epis
- 1 Onion, chopped
- 1 Green Bell Pepper, diced
- 1 Red Bell Pepper, diced
- 2 Roma Tomatoes, diced
- 2 tbsp Tomato paste
- 3 small Maggi cubes
- 4 Hot Dogs, cut into rounds
- ⅛ tsp ground Cloves
- ⅓ cup water (reserved pasta water)
- Salt to taste

Instructions
- Cook the spaghetti: Bring a large pot of salted water to a boil. Add ½ lb spaghetti and cook until al dente according to package instructions, usually about 8–10 minutes. Reserve a few ladles of the pasta water before draining and set aside the pasta.
- Prepare the base sauce: Heat ¼ cup olive oil in a large saucepan over medium heat. Add 2 tbsp Haitian epis and fry until it becomes fragrant and slightly golden, releasing the aromatic flavors of the herb and vegetable blend.
- Sauté the vegetables: Add the chopped onion, diced green and red bell peppers, and diced Roma tomatoes to the saucepan. Sauté for about 5 minutes until the vegetables are tender and softened, stirring occasionally.
- Build the sauce: Stir in 2 tbsp tomato paste and crumble in 3 small Maggi cubes. Add the 4 cut-up hot dogs and ⅛ tsp ground cloves. Mix well to combine all ingredients thoroughly.
- Simmer the sauce: Pour in ⅓ cup of the reserved pasta water to loosen the sauce. Let it simmer gently for 10-15 minutes until a rich sauce forms and the flavors meld together. Season with salt to taste.
- Combine pasta and sauce: Add the cooked spaghetti to the sauce and toss well to coat every strand with the flavorful sauce evenly.
- Serve: Plate the spaghetti and garnish each serving with half a hard boiled egg. Serve immediately and enjoy the vibrant Haitian flavors.
