Cookie Crust

- 2 cups powdered sugar
Fruit Toppings
- 1 ½ cups sliced strawberries
- 2 kiwis – skin removed and sliced
- ½ cup blueberries
- 9 oz canned mandarin orange sections – drained and patted dry with a paper towel
Instructions
- Preheat oven: Preheat the oven to 350°F (175°C) and prepare a round pizza pan by spraying it with non-stick cooking spray or lining it with parchment paper.
- Prepare cookie crust: Let the refrigerated cookie dough soften at room temperature for one hour. Use your hands to press the dough evenly into the pizza pan shape. Bake in the oven for 15 minutes or until the crust is golden brown. Remove from oven and allow it to cool completely before adding the frosting.
- Make cream cheese frosting: In a large bowl, combine softened cream cheese, softened unsalted butter, powdered sugar, and vanilla extract. Using a hand mixer, beat the mixture for 2-3 minutes until it becomes smooth and creamy.
- Frost the cookie crust: Spread the prepared cream cheese frosting evenly over the cooled cookie crust using a spatula, leaving a small border around the edges to expose a bit of the cookie.
- Arrange fruit toppings: Wash and slice the strawberries and kiwis, pat the mandarin orange sections dry, and gather the blueberries. Arrange the fruits in concentric circles starting from the outer edge inwards, creating an attractive fruit pizza design.
