Chicken and Vegetables
- 1 large yellow onion, sliced
- 4 boneless, skinless chicken breasts
- 1/2 tsp thyme leaves
Broth and Soup Mix
- 10.5 oz condensed cream of chicken soup
- 1 oz onion soup mix
- 2 cups beef broth
Toppings
- 6 – 8 slices provolone cheese
- 1 cup French’s crispy fried onions
Instructions
- Prepare Crock Pot: Spray the inside of the Crock pot well with cooking spray to prevent sticking.
- Layer Onions: Spread the sliced yellow onions evenly in the bottom of the Crock pot.
- Add Chicken: Place the boneless, skinless chicken breasts directly on top of the layer of onions.
- Make Sauce Mixture: In a mixing bowl, whisk together the condensed cream of chicken soup, onion soup mix, and beef broth until smooth.
- Pour Sauce: Pour the soup and broth mixture evenly over the chicken breasts in the Crock pot, ensuring they are well covered.
- Cook Chicken: Cover the Crock pot with its lid, set the temperature to LOW, and cook for 5 hours, allowing the chicken to become tender and absorb the flavors.
- Add Cheese: After 5 hours of cooking, arrange the provolone cheese slices on top of the chicken breasts.
- Melt Cheese: Replace the lid and continue cooking on LOW for about 10 more minutes until the cheese has melted thoroughly.
- Add Toppings: Remove the lid, sprinkle thyme leaves and French’s crispy fried onions over the melted cheese and chicken.
- Final Warm-up: Continue cooking on LOW without the lid for approximately 10 minutes to warm the crispy fried onions without losing their crunch.
- Serve: Serve the French Onion Chicken hot over cooked noodles or rice if desired. Enjoy your comforting meal!
Notes
- Ensure the cheese is fully melted before sprinkling the crispy fried onions to avoid sogginess.
- Use low heat to gently warm the crispy fried onions for a crunchy topping.
- You can substitute provolone cheese with Swiss or mozzarella if preferred.
- For a thicker sauce, remove the lid for the last 10 minutes to reduce liquid slightly.
- This dish pairs wonderfully with buttered noodles or steamed rice to soak up the flavorful sauce.
