Egg and Cheese Mixture

- 1 teaspoon finely chopped fresh herbs (thyme or rosemary)
- Salt and black pepper, to taste
- Pinch cayenne pepper (optional)
Instructions
- Toast the Bread: Lightly toast the bread slices or broil them for 1 to 2 minutes on each side until they are just beginning to brown but still soft enough to hold the egg mixture.
- Preheat the Oven: Set your oven to 400°F (200°C). If using a toaster oven, place the rack on the bottom and select the BAKE setting to ensure even cooking.
- Prepare the Egg Mixture: Crack the egg into a small bowl and beat it with a fork until the yolk and white are fully combined. Stir in the grated cheese and fresh herbs. Season the mixture with salt and black pepper according to your taste. If desired, add a pinch of cayenne pepper for a mild spicy kick.
- Assemble the Toasts: Spread the egg, cheese, and herb mixture evenly over the surface of each toasted bread slice, covering all the way to the edges.
