Ingredients
Scale
Meat Mixture
- 1 lb ground beef
- 1 chopped onion
- 1/2 tsp salt and pepper
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried cilantro
- 1/4 tsp cayenne
- 1 TBSP minced garlic
Base & Toppings
- 16 small fajita size flour tortillas
- 1 can refried beans
- Taco sauce (to taste)
- 2 cups shredded Colby Jack cheese
- Diced tomatoes (for topping)
- Chopped green onions (for topping)
Other
- Vegetable oil (for frying tortillas)
Instructions
- Brown the beef: In a large skillet over medium-high heat, brown the ground beef and add the chopped onion. Cook until the beef is fully cooked, then drain any excess grease.
- Season the beef: Add salt, pepper, chili powder, cumin, dried cilantro, cayenne, and minced garlic to the beef. Stir well to combine all the spices evenly with the meat.
- Fry the tortillas: While the beef is cooking, heat vegetable oil in a separate skillet over medium heat. Fry the small flour tortillas on both sides for 1-2 minutes until golden brown. Place them on paper towels to absorb excess oil.
- Prepare the base: Heat the refried beans until soft and easy to spread. Spread a layer of refried beans on one fried tortilla, then add a scoop of the seasoned ground beef, and a small amount of shredded cheese. Top with another fried tortilla, then spoon taco sauce on top and sprinkle more cheese over it.
- Bake the pizzas: Place the assembled pizzas on a baking sheet and bake at 400°F (200°C) for about 10 minutes, or until the cheese is melted and bubbly.
- Add fresh toppings and serve: Remove the pizzas from the oven and top them with diced tomatoes and chopped green onions. Serve immediately and enjoy!
