Perfect for a fast weeknight meal, it combines a delicious mix of textures and traditional bulgogi flavors that everyone will love.

Ingredients

Scale

Main Ingredients

  • 2 packs (17-oz./500g) udon noodles, preferably frozen
  • 2 tbsp vegetable oil
  • 300 g sliced beef rib eye or top sirloin
  • 1/2 medium onion, sliced
  • 40 g carrot, julienned
  • 30 g shiitake mushrooms or any mushroom of choice, sliced
  • 2 green onions, chopped
  • 1 tbsp oyster sauce, or to taste
  • Toasted sesame seeds and green onion for garnish

Bulgogi Marinade

  • 4 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • 6 cloves garlic, minced
  • 1/4 tsp black pepper

Instructions

  1. Prepare the marinade: In a small bowl, combine soy sauce, mirin, sesame oil, honey, brown sugar, minced garlic, and black pepper to create the bulgogi marinade.
  2. Marinate the beef and vegetables: In a medium bowl, add the sliced beef, sliced onion, julienned carrot, sliced mushrooms, and chopped green onions. Pour the marinade over the mixture and toss to coat evenly. Set aside for at least 10 minutes to allow flavors to meld, or marinate overnight for deeper flavor.
  3. Prepare the noodles: If using frozen udon noodles, soak them in hot water for about one minute. Use chopsticks to gently loosen the noodles, then rinse under cold water and drain thoroughly. Set aside.
  4. Cook the beef and vegetables: Heat the vegetable oil in a wok or large pan over medium-high heat. Add the marinated bulgogi beef and vegetables and stir-fry for about 2 to 3 minutes until the beef is browned and vegetables have softened.
  5. Add noodles and oyster sauce: Add the drained udon noodles and oyster sauce to the pan. Stir-fry everything together for an additional 1 to 2 minutes, ensuring the noodles are heated through and well coated with sauce.
  6. Garnish and serve: Remove from heat, garnish with toasted sesame seeds and chopped green onions. Serve immediately and enjoy this tasty, quick bulgogi beef udon stir fry.

Notes

  • Using frozen udon noodles is recommended as they maintain a chewy texture perfect for stir-frying and are less likely to become mushy.
  • Leftover stir-fried udon can be stored in an airtight container in the refrigerator for up to 3 days.
  • For best flavor, marinate the beef and vegetables overnight, but a minimum of 10 minutes is sufficient for a quicker meal.
