Instructions
- Brown the ground beef and cook onions: Add ground beef to a large skillet over medium heat and cook until browned. Add diced onions and continue cooking for 5-7 minutes until onions become soft and translucent. Drain excess grease and set the beef and onion mixture aside.
- Prepare the soup mixture: In a large bowl, combine the cream of mushroom soup, milk, salt, black pepper, onion powder, garlic powder, and Italian seasoning. Mix well until fully combined.
- Layer ingredients in the slow cooker: Place half of the thinly sliced potatoes at the bottom of the slow cooker. Top with half of the browned beef and onion mixture, then pour half of the soup mixture on top. Add half of the sliced carrots and 1 cup of shredded cheddar cheese. Repeat the layering process with the remaining potatoes, beef, soup mixture, carrots, and cheese.
- Cook the casserole: Cover the slow cooker and cook on High for 4-5 hours or on Low for 7-8 hours, until potatoes are tender and flavors meld.
- Rest before serving: Let the casserole cool in the slow cooker for 10-15 minutes before serving to help it set and make serving easier.
