Instructions

  1. Prepare the Filling: In a medium bowl, combine the cole slaw mix, minced garlic, ground ginger, soy sauce, and a pinch of salt and pepper. Cover and microwave for 3-5 minutes until the cole slaw mixture is cooked through. Drain any excess liquid and stir to evenly coat the seasonings.
  2. Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  3. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner pointed towards you. Spoon 2-3 tablespoons of the prepared cole slaw filling onto the center of the wrapper.
