Ingredients
Scale
Chicken
- 2 large boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons melted butter
- 1–2 tablespoons olive oil
Sauce
- 10.5 oz. cream of chicken soup
- 1 ½ cups milk
- 1 cup sour cream, at room temperature
- ½ teaspoon onion powder
- 1 oz. packet Ranch seasoning mix
Instructions
- Slice and Prepare the Chicken: Slice each chicken breast into 2-3 thin slices about ½ inch thick. Use a meat tenderizer to pound the slices evenly if needed, which helps the chicken cook evenly and remain plump.
- Season the Chicken: Pat the chicken slices completely dry. Sprinkle both sides evenly with Italian seasoning and salt and pepper to taste. Brush one side of each slice with melted butter, ensuring the butter is not too hot to prevent cooking the chicken prematurely.
- Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. In batches, sear the chicken slices for 4-5 minutes on each side until they develop a golden brown crust. Remove the chicken from the skillet and set aside.
- Prepare the Sauce: Using the same skillet, add the cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning mix over medium heat. Stir continuously until the ingredients are well combined and the sauce begins to bubble gently.
- Reduce the Sauce: Allow the sauce to simmer and reduce for about 5 minutes, thickening slightly and intensifying the flavors.
- Combine and Simmer: Return the seared chicken to the skillet, nestling the slices into the sauce. Spoon sauce over the chicken to coat it generously.
- Heat Through and Infuse Flavors: Partially cover the skillet with a lid and let the chicken heat through and absorb the sauce flavors for about 10 minutes over medium-low heat.
- Serve: Serve the creamy ranch chicken hot, optionally spooning extra sauce over baked potatoes or vegetables for a comforting meal.
Notes
- Use Ranch seasoning mix specifically, not Ranch dip mix, as their flavors and uses differ.
- Ranch seasoning adds a zesty, savory flavor without tasting like bottled ranch dressing.
- Crispy crumbled bacon makes a delicious topping to add crunch and flavor.
- Frozen vegetables can be added to the sauce when combining ingredients; allow time to heat through before adding chicken.
- If using smaller chicken breasts, consider using 3-4 pieces instead of 2 large ones.
- For variations, try Bacon Ranch Chicken or Ranch Pork Chops recipes for different proteins and added flavor.
- Store leftovers in an airtight container refrigerated for up to 3 days or freeze for up to 3 months.
- This dish freezes well and pairs nicely with baked potatoes and veggies for easy reheatable meals.
