- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 4 tablespoons butter
- 1 large onion, diced
- 3 cloves garlic, minced (3 teaspoons)
- 2 teaspoons Italian seasoning
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 2 1/2 cups chicken broth
- 1 cup long grain white rice
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- Fresh parsley, chopped (optional)
Instructions
- Sauté onion: Heat butter in a large skillet over medium-high heat. Add onion and cook until softened, about 2-3 minutes.
- Cook chicken: Add chicken, Italian seasoning, pepper, and salt to the skillet. Cook and stir until chicken is golden, about 5 minutes.
- Add garlic: Stir in garlic and cook for 1 minute more.
- Combine remaining ingredients: Add chicken broth and rice to the skillet. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 17-20 minutes, or until rice is tender.
- Stir in cream and cheese: Stir in heavy cream and Parmesan cheese. Serve immediately, topped with parsley if desired.
Notes
- You can use other types of rice, such as brown rice or wild rice, but adjust the cooking time accordingly.
- For a thicker sauce, reduce the amount of chicken broth or use half-and-half instead of heavy cream.
