Cheese Mix

  • 250g / 9oz full fat Cream Cheese
  • 100g / 3.5oz Mature/Sharp Cheddar Cheese, grated
  • 1/4 cup / 4 tbsp finely diced Chives

Nut and Fruit Mix

  • 150g / 5.3oz Dried Cranberries, roughly diced
  • 125g / 4.4oz Pecans, roughly diced

Instructions

  1. Prepare nut and fruit mix: In a small mixing bowl, combine the roughly diced pecans, dried cranberries, and finely diced chives. This mixture will be used partially inside the cheese log and partially to coat the outside.
  2. Combine cheeses with half the nut mix: In a large mixing bowl, add the full-fat cream cheese and grated mature cheddar cheese. Using a spatula, fold in half of the pecan, cranberry, and chive mixture until well combined.
  3. Mould the cheese log: Place the cheese mixture onto a large sheet of cling film. Using the cling film, shape and tightly roll the mixture into a log form. The cling film helps the log hold its shape firmly. Refrigerate for at least one hour to allow the cheese log to firm up; this resting time is optional but recommended to improve texture.
  4. Coat the cheese log: When ready to serve, spread the reserved half of the pecan mix on a chopping board. Unwrap the cheese log and roll or pat it onto the remaining nut mixture until fully coated all around.
  5. Serve: Place the cranberry pecan cheese log on a serving board alongside a selection of crackers. Slice as desired and enjoy this flavorful and festive appetizer.
