Description

Cranberry Brie Bites are a delightful and easy-to-make appetizer featuring creamy brie cheese and tangy whole berry cranberry sauce baked in flaky crescent dough cups, topped with fresh rosemary for a festive touch. Perfect for holiday gatherings or special occasions, these bite-sized treats combine sweet, savory, and herbaceous flavors in every warm, golden bite.

Ingredients

Scale

Dough

  • All-purpose flour, for dusting dough and cutting board
  • 8 ounce crescent dough sheet (or crescent rolls)

Filling

  • 8 ounce wheel of brie cheese
  • 1 cup whole berry cranberry sauce (not jellied)
  • Fresh rosemary sprig (about 2 sprigs, depending on length)

Instructions

  1. Preheat and Prepare Muffin Tin. Preheat your oven to 375°F (190°C). Spray a 24-count mini muffin tin with cooking spray to prevent sticking.
  2. Prepare Dough. Lightly dust your countertop or cutting board with all-purpose flour. Roll out the 8-ounce crescent dough sheet evenly. If using crescent rolls, pinch the seams together to form one continuous sheet.
  3. Cut Dough Squares. Cut the dough into 24 equal-sized squares, ensuring they will fit nicely into the mini muffin tin slots.
  4. Assemble Bites. Place each dough square into a muffin tin slot, forming a small cup shape. Cut the brie cheese wheel into small pieces suitable for one bite and place one piece inside each dough cup.
  5. Add Cranberry Sauce and Rosemary. Top each brie-filled dough cup with a generous spoonful of whole berry cranberry sauce. Then add a small piece of fresh rosemary sprig on top of each for added aroma and flavor.
  6. Bake. Place the muffin tin in the preheated oven and bake for about 15 minutes, or until the crescent dough is lightly golden brown and cooked through.
  7. Serve. Remove from oven and allow to cool slightly before serving warm for optimal flavor and texture.

Notes

  • Use whole berry cranberry sauce for texture and an authentic flavor — avoid jellied versions.
  • If you don’t have fresh rosemary, you can substitute with a small pinch of dried rosemary, but fresh is preferred for the best aroma.
  • Make sure to spray the mini muffin tin well to prevent sticking.
  • These bites can be made ahead and warmed slightly before serving.
  • Pair with sparkling wine or a light white wine for an elegant appetizer pairing.
