Description

These homemade cottage cheese chips are a simple and high-protein snack. Made with just one main ingredient, they bake into crispy, savory chips that are perfect for dipping or eating on their own. Customize them with your favorite seasonings for a delicious, low-carb treat.

1 cup (256 g) whole milk small curds cottage cheese (4% milkfat)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (177°C). Line a large baking sheet with parchment paper.
  2. Prepare the Cottage Cheese:
    Use a 1-tablespoon cookie scoop (or spoon) to portion out scoops of cottage cheese onto the prepared baking sheet. Space them about 2 inches apart.
    Flatten each scoop of cottage cheese with the back of a metal spoon to about 3/16 to ¼ inch thick. If you’re adding seasoning, sprinkle it on now.
  3. Bake the Chips:
    Bake the cottage cheese chips for 40-50 minutes, or until the edges turn dark brown and the surface is golden brown. The browner they get, the crispier they’ll be. Keep a close eye on them during the last few minutes of baking to prevent over-browning.
  4. Cool the Chips:
    Remove the chips from the oven and let them cool completely on the baking sheet (about 20-30 minutes). The chips will continue to firm up as they cool. Do not eat them before they’re fully cooled as they won’t be set yet.
  5. Enjoy or Store:
    Enjoy the chips once they’re fully cooled and crunchy. If not eating immediately, store them in an airtight container or sealed bag to maintain their crispness. Consume within a few hours. If storing leftovers for longer, refrigerate or freeze the chips and rebake briefly to restore crispness.

Notes

  • This recipe works best with whole milk cottage cheese with a high protein content. Aim for brands with 14g of protein per ½ cup, such as Good Culture brand. Lower protein cottage cheese may yield less crunchy chips.
  • You don’t need to blend the cottage cheese beforehand.
  • Customize the flavor by adding your favorite seasonings, like salt, pepper, or everything bagel seasoning. If using seasoning, add it before baking.
  • Cottage cheese chips are best enjoyed fresh, as they can soften when stored. You can crisp them up again by rebaking them for a few minutes.
