Ingredients

  • 1 pound conch meat, tenderized or steaks
  • 1 cup diced tomato
  • 1 cup diced green bell pepper
  • 1 cup diced red bell pepper
  • 3/4 cup diced sweet onion
  • 1 habanero pepper, seeded and minced (use only a quarter or half for mild)
  • Juice of 1 juicy orange
  • Juice of 2 juicy limes
  • Salt and pepper

Instructions

  1. Set out a large mixing bowl.

  2. Chop the conch meat into even 1/4-inch cubes and place them in the bowl.

  3. Chop all the fresh produce and add them to the bowl. If you are sensitive to spicy heat, use only a quarter or half of the habanero.

  4. Juice the orange and limes, then pour the juice over the salad.

  5. Generously season with salt and pepper, and toss to coat. Taste, and adjust the salt and pepper as needed.

  6. Chill the salad until ready to serve.
