These festive Christmas Tea Sandwiches are perfect for holiday gatherings, featuring delicate white bread cut into charming Christmas tree and holly leaf shapes. Instructions

  1. Cut bread shapes: Cut out 8 Christmas tree shapes from the center of 8 slices of bread using a cookie cutter that fits mainly in the center. Then cut out 24 holly leaf shapes from the other 8 slices or as many as the cutter size allows.
  2. Prepare pineapple cream cheese: Divide the cream cheese in half. Mix 4 oz cream cheese with crushed pineapple and its juice, adding more juice if needed for preferred consistency. Spread this mixture over the base half of the bread cut outs, then top with the corresponding Christmas tree bread shapes.
  3. Prepare green cream cheese icing: Mix the remaining 4 oz cream cheese with sour cream or mayonnaise until spreadable but firm. Gradually mix in green food coloring starting with a tiny amount, adding more until the desired shade is reached.
  4. Decorate holly leaves: Using a #67 piping tip, pipe a green strip along the center of each holly leaf sandwich. Place a couple of pomegranate seeds at one end of each strip to resemble holly berries.
  5. Decorate Christmas trees: Using the #67 piping tip, pipe green strips from the center top of each Christmas tree sandwich out to each tree tip, mimicking sweeping evergreen boughs. Place a single pomegranate seed at the tip of each bough to represent decorative ornaments.
  6. Chill and serve: Keep the assembled sandwiches chilled until ready to serve. They can also be made a day ahead and stored airtight in the refrigerator overnight for convenience.
