Description

These festive Christmas Rice Krispie Treat Bites combine colorful marshmallow mixtures with crispy cereal to create a fun and easy holiday snack. Perfect for parties or gifting, these treats are rolled into bite-sized balls and decorated with holiday sprinkles for a delightful seasonal treat.

Ingredients

Scale

Rice Krispie Treat Mixture

  • 9 cups Kellogg’s Rice Krispie Cereal
  • 9 cups Mini Marshmallows
  • 9 tablespoons Butter (Sweet Cream, Salted)
  • Wilton Color Right Food Coloring – Red, Crimson, Yellow, Blue
  • Nonpareils Christmas Sprinkles (optional)

Instructions

  1. Melt Butter: In a medium pan, melt 3 tablespoons of butter over medium heat until fully liquefied.
  2. Combine Marshmallows: Add 3 cups of mini marshmallows to the melted butter and stir continuously until the marshmallows are completely melted and smooth.
  3. Add Food Coloring: Remove the pan from heat and stir in your desired food coloring (red, green made by mixing blue and yellow, or leave white for no coloring) to create the Christmas colors.
  4. Mix in Cereal: Add 3 cups of Rice Krispie cereal to the marshmallow mixture and stir well until the cereal is evenly coated.
  5. Add Sprinkles (Optional): Fold in Christmas sprinkles if desired to add extra festive decoration and texture.
  6. Cool the Mixture Slightly: Allow the Rice Krispie mixture to cool just enough to handle safely but while still pliable.
  7. Form Bites: Measure approximately 0.6 ounces of the mixture and roll it into small balls by hand.
  8. Set the Bites: Place the Rice Krispie Treat Bites on a cooling rack or parchment paper and allow them to cool completely to set.
  9. Repeat for Remaining Colors: Repeat steps 1 through 8 two more times to create the other two holiday colors, for a total of three batches.

Notes

  • Work quickly when handling the marshmallow mixture since it hardens as it cools.
  • You can customize colors by mixing different food coloring shades.
  • Use gloves or spray your hands lightly with cooking spray to prevent the mixture from sticking while rolling balls.
  • Store Rice Krispie Treat Bites in an airtight container at room temperature for up to 3 days.
  • For different shapes, press the mixture into molds instead of rolling into balls.
