Ingredients
Scale
Dry Ingredients
- 3 cups crushed vanilla wafer cookies
- ¾ cup confectioners’ sugar
- ¼ cup unsweetened cocoa powder
- 1 ½ cups finely chopped pecans
Wet Ingredients
- 1 teaspoon pure vanilla extract
- 3 tablespoons light corn syrup
- ½ cup spiced rum
Instructions
- Mix Dry Ingredients. In a large bowl, combine the crushed vanilla wafers, confectioners’ sugar, cocoa powder, and finely chopped pecans thoroughly to create a consistent base mixture.
- Add Wet Ingredients. Drizzle in the vanilla extract, light corn syrup, and spiced rum. Stir well until all ingredients are evenly incorporated and form a sticky, moldable dough.
- Shape the Rum Balls. Using about 4 teaspoons of the mixture per ball (approximately 2 level scoops with a small cookie scoop), form mixture into 1-inch balls or slightly larger, ensuring they hold together firmly.
- Coat the Rum Balls. Roll each ball in additional confectioners’ sugar, cocoa powder, sprinkles, or other coatings of your choice to finish and add an appealing outer layer.
- Chill and Store. Place the rum balls in an airtight container and refrigerate for several days to allow the flavors to develop fully. If rolling in confectioners’ sugar, recoat before serving as needed.
- Serve. Optionally, present rum balls in mini cupcake liners for a festive and tidy presentation.
Notes
- If you roll the Rum Balls in confectioners’ sugar, you might need to recoat them prior to serving as the sugar can absorb moisture over time.
- Serving the Rum Balls in mini cupcake liners not only makes for an attractive presentation but also helps keep them separate and easy to handle.
- Allowing the rum balls to rest in the refrigerator for several days enhances the depth of flavors and improves texture.
