Description

This Chicken Salad with Cottage Cheese is a light and refreshing dish with a unique twist. Tender chicken, crisp apples, grapes, and crunchy walnuts are combined with a creamy cottage cheese dressing for a flavorful and satisfying salad.


Ingredients

  • 4 cups shredded chicken (about 2-3 large chicken breasts or 1 rotisserie chicken)
  • 3/4 cup sliced red grapes
  • 1 medium Granny Smith apple, diced
  • 3 stalks celery, diced
  • 1/2 cup roughly chopped walnuts
  • 1/2 cup diced red onion
  • 3 tablespoons finely chopped fresh tarragon, divided
  • 1 1/2 cups cottage cheese
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste

 


Instructions

  1. Cook chicken (if needed): If using raw chicken, bake at 350°F (175°C) for 25 minutes, or until cooked through. Shred or chop into bite-sized pieces.
  2. Combine salad ingredients: In a large bowl, combine shredded chicken, grapes, apple, celery, onion, walnuts, and 1 tablespoon of tarragon.
  3. Make dressing: In a food processor, blend cottage cheese until smooth and fluffy. Add Dijon mustard, remaining tarragon, salt, and pepper. Pulse to combine.
  4. Assemble and serve: Add cottage cheese dressing to the salad and mix well. Serve immediately or refrigerate for up to 4 days.

Notes

  • You can use pre-cooked or rotisserie chicken for convenience.
  • If you don’t have fresh tarragon, you can use dried tarragon.
  • This salad is delicious served on bread, crackers, or lettuce cups.
