- 4 cups shredded chicken (about 2-3 large chicken breasts or 1 rotisserie chicken)
- 3/4 cup sliced red grapes
- 1 medium Granny Smith apple, diced
- 3 stalks celery, diced
- 1/2 cup roughly chopped walnuts
- 1/2 cup diced red onion
- 3 tablespoons finely chopped fresh tarragon, divided
- 1 1/2 cups cottage cheese
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
Instructions
- Cook chicken (if needed): If using raw chicken, bake at 350°F (175°C) for 25 minutes, or until cooked through. Shred or chop into bite-sized pieces.
- Combine salad ingredients: In a large bowl, combine shredded chicken, grapes, apple, celery, onion, walnuts, and 1 tablespoon of tarragon.
- Make dressing: In a food processor, blend cottage cheese until smooth and fluffy. Add Dijon mustard, remaining tarragon, salt, and pepper. Pulse to combine.
- Assemble and serve: Add cottage cheese dressing to the salad and mix well. Serve immediately or refrigerate for up to 4 days.
Notes
- You can use pre-cooked or rotisserie chicken for convenience.
- If you don’t have fresh tarragon, you can use dried tarragon.
- This salad is delicious served on bread, crackers, or lettuce cups.
