These Chicken Parmesan Rolls are a delicious and easy twist on the classic Italian-American dish. They’re made with a simple dough that’s filled with tender chicken, marinara sauce, and melted mozzarella cheese, then baked to golden perfection.

For the Dough:
- 2 cups all-purpose or white whole wheat flour (plus more for dusting)
- 3 teaspoons baking powder
- 1 teaspoon kosher salt
- 2 cups Stonyfield non-fat Greek yogurt (not regular, drained if there’s any liquid)
For the Filling:
- 16 ounces grilled chicken breast, sliced (about 2 cups)
- 1 cup marinara sauce
- 1 1/2 cups shredded part-skim mozzarella cheese
For the Egg Wash:
- 2 large eggs
- Sesame seeds
Instructions
- Make Dough: In a medium bowl, combine the flour, baking powder, and salt and whisk well. Add the yogurt and mix with a fork or spatula until well combined; it will look like small crumbles.
- Knead Dough: Lightly dust flour on a work surface and remove the dough from the bowl. Knead the dough a few times until smooth, with no lumps. The dough will be tacky but not sticky.
- Preheat and Prep: Preheat the oven to 425°F. Line a sheet pan with a silicone mat or parchment paper.
- Assemble Rolls: Divide the dough into 8 equal balls. Lightly sprinkle a work surface and rolling pin with flour and roll each ball of dough out into a thin round, 7 inches in diameter. Spread 2 tablespoons of marinara sauce down the center of the circle in a strip, top with ½ cup of chicken, and sprinkle with 6 tablespoons of cheese. Repeat for each roll.
- Fold and Seal: Fold the right side of the dough over the top of the chicken, then repeat with the left side. Press the edges to seal.
- Egg Wash and Bake: Brush the top with egg wash and sprinkle with sesame seeds. Bake until golden, about 20 minutes. Serve hot.
Notes
- Gluten-Free: This recipe has not been tested with gluten-free flour, but it may work with a gluten-free 1-to-1 baking flour blend. You may need to add 5 more minutes to the baking time.
- Yogurt: Use Greek yogurt for this recipe, not regular yogurt.
- Chicken: You can use leftover cooked chicken or rotisserie chicken.
- Cheese: You can use your favorite type of cheese for this recipe.
