Description

This Chicken Meatloaf is a healthier and lighter twist on a classic comfort food. It’s made with ground chicken, a blend of vegetables and spices, and a sweet and tangy glaze.

Chicken Meatloaf:

  • 1 pound ground chicken
  • 1 1/4 cups breadcrumbs
  • 1/2 cup finely chopped onion
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce

Glaze:

  • 3/4 cup ketchup
  • 3 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C).
  2. Combine ingredients: In a large bowl, combine ground chicken, breadcrumbs, onion, Parmesan cheese, parsley, salt, garlic powder, pepper, milk, eggs, tomato paste, and Worcestershire sauce. Mix well.
  3. Make glaze: In a small bowl, stir together ketchup, brown sugar, and Worcestershire sauce.
  4. Assemble and bake: Spoon a couple of tablespoons of glaze into the bottom of an 8×4-inch loaf pan. Add the meatloaf mixture and spread the remaining glaze on top. Bake for 80-90 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Rest and serve: Let the meatloaf rest for at least 5 minutes before slicing and serving.

Notes

  • Start with 1/2 cup of milk and add more as needed until you reach your desired consistency.
  • Do not pack the meatloaf mixture too firmly into the loaf pan.
  • Use a meat thermometer to check for doneness.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 4 months.
