This Chicken Meatloaf is a healthier and lighter twist on a classic comfort food. It’s made with ground chicken, a blend of vegetables and spices, and a sweet and tangy glaze.

Chicken Meatloaf:
- 1 pound ground chicken
- 1 1/4 cups breadcrumbs
- 1/2 cup finely chopped onion
- 1/2 cup shredded Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1/2 cup milk
- 2 large eggs
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
Glaze:
- 3/4 cup ketchup
- 3 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat oven: Preheat oven to 350°F (175°C).
- Combine ingredients: In a large bowl, combine ground chicken, breadcrumbs, onion, Parmesan cheese, parsley, salt, garlic powder, pepper, milk, eggs, tomato paste, and Worcestershire sauce. Mix well.
- Make glaze: In a small bowl, stir together ketchup, brown sugar, and Worcestershire sauce.
- Assemble and bake: Spoon a couple of tablespoons of glaze into the bottom of an 8×4-inch loaf pan. Add the meatloaf mixture and spread the remaining glaze on top. Bake for 80-90 minutes, or until the internal temperature reaches 165°F (74°C).
- Rest and serve: Let the meatloaf rest for at least 5 minutes before slicing and serving.
Notes
- Start with 1/2 cup of milk and add more as needed until you reach your desired consistency.
- Do not pack the meatloaf mixture too firmly into the loaf pan.
- Use a meat thermometer to check for doneness.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 4 months.
