Instructions

Stir in about half of the shredded Mexican blend cheese, incorporating everything evenly.
- Bake Covered: Pour the combined mixture into the prepared baking dish and spread it evenly. Cover tightly with aluminum foil to trap moisture and help the rice cook through evenly. Bake for 35 to 45 minutes or until the rice is tender and the casserole is bubbling.
- Add Cheese and Finish Baking: Remove the casserole from the oven, uncover, and sprinkle the remaining cheese evenly over the top. Return it to the oven for a few minutes until the cheese melts and becomes gooey and golden.
- Serve: Once the cheese is melted and bubbly, take the casserole out, let it cool slightly, then serve warm for a hearty, flavorful meal perfect for weeknights or gatherings.
