  • 4 cups Boneless skinless chicken breasts (cooked, cubed or shredded)
  • 8 slices Bacon (cooked, chopped)
  • 3 cloves Garlic (minced)
  • 1 cup Ranch dressing
  • 1 cup Mozzarella cheese (shredded, divided)
  • 1 cup Cheddar cheese (shredded, divided)

Version 1 with Broccoli:

  • 5 cups Broccoli (cut into florets)

Version 2 with Spinach:

  • 1 lb Frozen spinach (thawed, squeezed to drain well)

Instructions

  1. Preheat the oven: Set your oven to 375 degrees F (191 degrees C) to prepare for baking the casserole.
  2. Prepare vegetables: If using frozen spinach, thaw it completely and squeeze out excess water. For broccoli, bring a pot of water to a boil and blanch the florets for 1-2 minutes until they are bright green, then drain well.
  3. Combine ingredients: In a large bowl, mix together the cooked chicken, chopped bacon, prepared spinach or broccoli, minced garlic, ranch dressing, and half of the shredded mozzarella and cheddar cheeses. Stir thoroughly until evenly combined. Transfer this mixture into a 9×13 inch (23×33 cm) glass or stoneware casserole dish. You may also mix ingredients directly in the casserole dish if preferred.
  4. Add extra flavor (optional): For more ranch flavor, sprinkle 1-3 teaspoons of ranch seasoning mix into the mixture before baking.
  5. Top with cheese: Evenly cover the top of the casserole with the remaining shredded mozzarella and cheddar cheeses.
  6. Bake the casserole: Place the dish in the preheated oven and bake for about 15 minutes, or until the casserole is hot and bubbly and the cheese on top has melted.
