Description

This Cheesy Enchilada Chili is a hearty and flavorful dish that’s perfect for a cozy meal. It combines the flavors of enchiladas and chili with ground beef, beans, corn, and a creamy, cheesy sauce.


Ingredients

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • 1 jar Tostitos Salsa Con Queso
  • 1 can potato soup (10.75 oz)
  • 1 1/4 cups sour cream
  • 1 can fire-roasted diced green chilies (4 oz)
  • 1 1/4 cups beef broth
  • 1/2 cup chicken broth
  • 1 cup frozen corn
  • 1 cup pinto beans or black beans, drained and rinsed

Instructions

  1. Brown Beef: Brown ground beef in a skillet and drain if needed.
  2. Season Beef: Add taco seasoning and water, cook until water is absorbed.
  3. Combine Ingredients: Put taco meat in a Dutch oven or large pot. Add the jar of salsa, can of soup, sour cream, and both broths, stirring well until sour cream is melted in.
  4. Add Remaining Ingredients: Add the diced chilies, corn, and pinto beans or black beans. Stir well.
  5. Heat Through: Bring to a boil to heat well, then reduce heat and serve or simmer until ready to eat, stirring often.
  6. Serve: Serve with tortilla chips or Fritos. Add jalapeños to your bowl for an extra kick! Enjoy!

  • Ground Beef: You can use any type of ground meat you like, such as ground turkey or chicken.
  • Beans: You can use either pinto beans or black beans for this recipe.
