Description

This Cajun Chicken Pasta is a quick and easy weeknight meal that’s packed with flavor. Tender chicken and colorful vegetables are tossed with linguine in a creamy Cajun-spiced sauce.


Ingredients

  • 8 ounces uncooked linguine
  • 1 pound boneless, skinless chicken breast, cut into strips
  • 12 teaspoons Cajun seasoning (or more to taste)
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 medium red bell pepper, thinly sliced
  • 1 medium yellow bell pepper, thinly sliced
  • 8 ounces fresh mushrooms, sliced
  • 1/2 red onion, sliced
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 cup low-sodium chicken broth
  • 1/3 cup skim milk
  • 1 tablespoon flour
  • 3 tablespoons light cream cheese
  • Freshly cracked black pepper
  • 2 scallions, chopped
  • Kosher salt to taste
  • Olive oil spray

Instructions

  1. Prep: Prep all your vegetables. In a small blender, make a slurry by combining milk, flour, and cream cheese. Set aside.
  2. Season Chicken: Season chicken generously with Cajun seasoning, garlic powder, and salt.
  3. Cook Pasta: Prepare pasta in salted water according to package directions.
  4. Cook Chicken: Heat a large heavy nonstick skillet over medium-high heat; spray with oil and add half of the chicken. Sauté 5 to 6 minutes or until done, set aside on a plate and repeat with the remaining chicken.
  5. Sauté Vegetables: Add olive oil to the skillet and reduce heat to medium. Add bell peppers, onions, and garlic to the skillet and sauté for 3-4 minutes. Add mushrooms and tomatoes and sauté for 3-4 more minutes or until vegetables are tender. Season with ¼ teaspoon salt, garlic powder, and fresh cracked pepper to taste.
  6. Make Sauce: Reduce heat to medium-low. Add chicken broth and pour in the slurry, stirring for about 2 minutes.
  7. Combine and Serve: Return chicken to the skillet. Adjust salt and Cajun seasoning to taste, and cook for another minute or two until hot. Then add linguine and toss well to coat. Top with chopped scallions and enjoy!

Notes

  • Chicken: You can use boneless, skinless chicken thighs instead of chicken breasts if you prefer.
  • Pasta: You can use other types of pasta, such as fettuccine or spaghetti.
  • Vegetables: Feel free to add other vegetables to the stir-fry, such as broccoli florets or zucchini.
  • Spice Level: Adjust the amount of Cajun seasoning to your preferred spice level.
